I like to make these cookies before a party, camping trip, or potluck. They are always a crowd pleaser, full of fun ingredients. This time, I am making them to take to a music festival where my sweetheart and I will camp for 4 days and celebrate our fifth anniversary. Originally, I planned on adding five of my boyfriend’s favorite treats, but I think adding a few extra might be good luck….
There is no rule about what you put into these cookies, try ginger pieces, chopped dried papaya and butterscotch chips for an extra sweet treat, or go for a more classic cookie and leave the nuts out all together. It’s your party, cookies are supposed to make you happy.
I use a Kitchenaid Artisan Mini Mixer for this recipe, it makes the whole process so fast and easy.
preheat oven to 350
2 cups of organic all purpose flour, sifted
1 cup oats
1 tsp baking powder
1 tsp baking soda
3/4 cup organic cane sugar
3/4 cup dark brown sugar
2 sticks unsalted organic butter
1 tsp vanilla
chocolate chips (I like semi sweet)
Tony’s Chocolonely pecan coconut chocolate bar 1/2 half of it. Chopped.
flaky salt: North Sea Salt Works or Maldon
A smoky tea in your favorite mug
In your mixer, cream the butter, then add the white sugar and beat until nice and fluffy. Spoon in the vanilla, and add the brown sugar and eggs and beat until combined.
Slowly add the flour, oats, baking soda, and baking powder.
Everything at this point will be pretty thoroughly mixed together.
Unplug your mixer, and remove the paddle.
At this point, add all the delicious bits: the chocolate chips, pecans, pumpkin seeds, raisins, etc etc, whatever your heart desires. I love the Tony’s pecan coconut chocolate bar, it adds a little extra special bite.
stir together with a wooden spoon.
scoop a tiny bit onto a spoon and taste. Place silver dollar sized mounds onto the parchment paper. Sprinkle your favorite salt on the top. You could also use a flavored salt, like vanilla salt or smoky salt!
Bake for 15 minutes or until BARELY golden brown.
Remove and place onto a wire rack to cool, if you can keep the inquiring fingers at bay…
Enjoy with friends or loved ones, or by yourself. I will be enjoying these with my honey in the forest while listening to some sweet music.
